Buttermilk Pancakes

Ingredients

  • 2 Eggs (separated)
  • 1/4 C sugar (or I use 1 packet of sweetener)
  • 2 C Buttermilk
  • 1/2 tsp Baking Soda
  • 2 C Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 TBSP oil or melted butter
  • Directions

    1. Separate the eggs into 2 different bowls. Whip the egg whites on high speed until soft peaks, sprinkle in sugar/sweetener. Whip to stiff peaks and set aside.
    2. In the other bowl mix egg yolks, buttermilk and Baking Soda.
    3. Combine the other dry ingredients (Flour, Salt, Baking powder) and mix into the egg/buttermilk mixture.
    4. Lastly, mix in the oil.
    5. Fold in the Egg whites and set aside while the griddle is heating.
    6. Fry on griddle until golden brown (On an electric griddle I use about 325 degrees.)​.
